When it comes to organic futon mattresses and you are looking for all natural ingredients, do not fall for "soy based foam". Soy based foam may sound all nice and healthy, but this type of foam does not provide the same quality of density as regular petroleum based foam.  The next best thing and alternative to foam is latex.  If you have the money to invest in an organic mattress, you will find that latex will provide the most ultimate comfort level.  It will give shape to your mattress as well as provide a slight bounce or "give" when you plop yourself on it.  Although the word "latex" has some sort of synthetic connotation, this type of latex is natural and comes from the rubber tree.  If latex was as inexpensive as foam, I would always recommend going with latex.  Keep in mind that the latex is sandwiched in between wool and cotton batting so the surface ticking will not feel "latexy" or "rubbery".  Not only does the latex provide better comfort, but it will also help keep the cotton batting and wool contents in place better which makes your mattress surface more even.
